  Baking and the Year 2021 A lot of times people think baking is just about mixing eggs, sugar, and flour viola!!! Your cake is ready. According to Britannica, baking is the process of cooking by dry heat, especially in some kind of oven. It is probably the oldest cooking method. Bakery products include bread, cakes, cookies, pies amongst other amazing products. I started baking in 2016, just some months after I graduated from the university, I was watching a food network program with my parents and my dad said "Lolly" when will you make this for us". Mind you I am not the best at cooking but I enjoy watching cooking and baking shows because it shows how much creativity and effort people put into making something so delicious. After what my dad said, it struck a chord in me and I was also tired of staying at home while I wait for the NYSC program.   Standing under the mango tree again today, it’s just like de ja vu but I know it’s only because I’ve been here before. Right here, in this spot, doing exactly the same thing……… nothing. It’s just like every Friday at noon, i pack up my books and stand under the mango tree and do nothing but count the seconds and minutes until the final bell goes and I’m free of this school for the weekend. Emeka is always running away from a teacher and Bertha always spends the last 10 minutes of school in the girls bathroom freshening up to walk home with Ejike, her high school sweetheart. Bertha walks around with her posey of girls flocking around her like lost sheep. And me? I just stand under the mango tree ticking off the seconds. I used to believe school comes first before anything. Go to nursery & primary school, secondary school, the university then serve before I could do any other thing I have passion for. So, I focused on school, read to pass every class, went for extra lessons just to be the best. I didn’t have time for any other thing.  So many opportunities came by, I didn’t take advantage of them. I just wanted to graduate, forgetting there’s a tough life after school. I will have to take care of myself, provide for myself, pay bills and all. To do this, I should have so many sources of income.  In 2020, after the lockdown in Nigeria, I decided to learn makeup artistry.
